Yam Soup
4 yams or sweet potatoes
1 large onion
1 tbsp olive oil
6 cups of veggie broth or chicken broth
1. Preheat oven to 400 degrees F.
2. Put yams on foil lined cookie sheet and bake in oven for 1 to 1 1/2 hours.
3. Once the yams are cooked, chop up onion and add to large pot with 1 tbsp of olive oil. Cook until soften and a little bit caramelized.
4. Add yams and broth to the pot.
5. At this point I use a hand blender and puree the soup right in the pot. If you don't have this then you will have to use a food processer or blender.
6. Heat over low heat because this soup will spit and burp at you if you are not careful!
7. When hot, spoon in bowls and add a little milk to make it creamer or cool it down for the kids.
8. Serve with toast or biscuits.
